The worlds best fried chicken!



This is probably the most famous food from my state, Kentucky. Although, I must say, KFC chain chicken is not very good. I remember eating it as a kid. We liked it then. Not so much these days. It seems today, their chicken main component is salt and grease.
On to the Best Ever:
1 chicken cut into pieces- usually six but it does work with ten.
4 cups of butter milk
Soak chicken overnight in buttermilk.
Crust:
3 to 4 cups of sifted all purpose flour.
1 and 1/2 tablespoons kosher salt
1 tablespoon coarse ground black pepper
1 tablespoon paprika
1/2 tablespoon garlic powder
1 brown paper sack
1 large cast iron skillet
Enough oil to come up 2 to 3 inches in you skillet. I like peanut or canola oil. This is ruffly around 2 to 3 cups.

Take chicken out of buttermilk and shake chicken to remove excess buttermilk.  Add all spices to sifted flour and place in paper sack. Shake bag to mix in spices. Take each chicken pieces one by one and shake in flour mix. Let this rest- meaning leave the coated chicken alone for 20 minutes. Heat your oil to med high. Drop a little piece of the batter in. if it quietly sizzles you are good to go! I cook the meats separate. It takes around 12 minutes per side. You could fry each piece for 8 minutes each side then finish in a 350 degree oven for 15 minutes. No oven temp is exact make sure you pierce a piece to make sure it is done! Enjoy! Remember, you can ROCK THAT PLATE!
