Meat Loaf #1!








Mainly Meat that Loafs!
4 lbs. of 80/20 ground beef- I buy the economy log! This is enough to freeze an uncooked loaf.. ad serve in a pinch. You can substitute ground turkey!
1 carrot
1 stalk celery- small dice
1/2 green bell pepper- small dice
1 small white onion- small dice
1 egg
4 slices whole wheat bread
milk
4 cloves of garlic- minced
2 table spoons Worcestershire sauce
1 tablespoon cumin
1 1/2 tablespoons hot paprika
3/4 tablespoon red pepper flake
1 tablespoon Cajun seasoning
sea salt and pepper
What is vital is that you tear the bread into pieces and let soak in milk that just covers it for 4-5 minuets. Get your hands ind there and smoosh (technical term)the bread until it becomes a creamy soupy paste. Sounds yummy right? Add in your egg and all spices and stir until combined! Dump those cut up veggies and garlic in and combine. Get ready for the BEEF. Add in burger and ONLY mix until combined. The longer you kneed the tougher it will be. You can add in your own joke, if you want. Foil lined sheet pan. Make 2 hand formed, free standing loaves. Bake at 350 degrees until a crust forms. When a crust forms add sauce. I have cheated and covered the whole thing in Heinz 57 and most time I make my own BBQ.
BBQ Sauce:
1 bottle of cheap ketchup in squeeze bottle
1/2 cup brown sugar
fat squeeze of honey
2 tablespoons Dijon or stone ground mustard
1/2 cup apple cider vinegar
1 tablespoon
1 pack of chili powder I use Bloemer's Hot!!
1 tablespoon Worcestershire sauce
Hot sauce to taste
Add all ingredients into a sauce pot and heat. When I put it on meatloaf I reserve 1 cup. The rest I cool and put back in the squeeze bottle from whence it came! It is easy to use and stores well this way.
