Sweet potato Pie!












This pie is lightning fast to make and taste SUPER! The Glory Foods company makes a sweet potato casserole product in a can and I just add a few personal touches. I also use pre-made pie dough. The kind in the frig section by the dairy and biscuits. Just crimp the crust awkwardly and everyone will think you made it!

1 pre made pie crust
1 can of Glory Foods sweet potato casserole
3 tablespoons of melted butter or margarine
2 eggs (I used 3!)
1 cup of sweetened condensed milk (I used the whole small can)
1 tablespoon vanilla extract
2 teaspoons corn starch
zest of 1 orange and half of the juice
2 teaspoons of cinnamon and ground ginger
Easy, easy ,easy...Pre heat oven to 400 degrees. Put all ingredients into a bowl and blend until smooth. Take your filling and put it in your crimp pie crust. Place in oven on a sheet pan in case something goes overboard. Bake on 400 degrees for 10 minutes. Turn the temperature down to 300 degrees. You will know it is set when you can stick a paring knife in the center and it comes out slightly wet. It has to be slightly wet because of carry over cooking time. Once the pie is out of the oven it is still cooking until it releases all of its heat. YUMMY! Remember, you can ROCK THAT PLATE!
