Cilantro lime chicken salad!

I decided to redeem myself. This is a fresh and healthy salad. Jason spiced the chicken and picked the salad mix! YES! I said Jason. I believe my internet ramblings have sparked his interest in creating recipes. That is truly wonderful. Thank you, Jason!!

Salad:
2 bags of Dole Very Veggie salad mix - it contains:

Romaine lettuce
iceberg lettuce
carrots
snow peas
red cabbage
radishes

1 container of boneless, skinless chicken tenders
1 teaspoon cayenne pepper
1 teaspoon garlic powder
1 teaspoon oregano
2 teaspoons kosher salt
2 teaspoons black pepper
Sprinkle this mixture over chicken. Place on a foil lined sheet pan. Spray with Pam. Place in a 400 degree oven and bake for 25 to 35 minutes until browned.
 
Dressing:
2 tablespoons of honey
1 teaspoon ginger- powder
1 lime- juiced and zest
3 tablespoons of god quality olive oil
2 tablespoons cilantro- minced
1/2 teaspoon cayenne pepper
kosher salt and black pepper
 
Place juice of lime and honey in a small bowl and whisk. Add all other ingredients and whisk. Please taste for seasonings. Add more spices if you need them.
