Greenbeans!



2 or 3 pounds of fresh green beans (I like Blue Lake- or what ever you grow or find locally!)
1 Spanish onion- small dice
4 strips of bacon- 1 inch pieces- I use scissors, this makes it fast and easy just to cut the raw bacon.
1 can of diced tomatoes
1 can of chicken stock
2 cloves of garlic- minced finely
1 teaspoon of red pepper flakes
salt and pepper to taste

Place bacon on large pot  with onion and saute till crisp. This usually takes around 5 minutes. Add all other ingredients. Place lid on pot and cook on medium heat. This cooking time depends on if you want your beans crisp or fork tender.
This is a quick and great tasting side dish! I hope you try this. As a side note: I used leftover diced Honey Baked Ham in this recipe over the Holidays.It was sweet, spicy, and delicious! Remember, you can ROCK THAT PLATE!
