Lemon Cornmeal Blueberry Muffins!

2 boxes of corn muffin mix. You know like Jiffy or Glory cornmeal mixes.
1 cup all purpose flour
2 lemons- zest and juice
1 tablespoon of sugar
2 eggs
1/2 cup of milk
2 table spoons melted butter or margarine
2 cups fresh or frozen blueberries. Honestly fresh is best.

Mix everything together. Save the blueberries for the last. Gently stir them in. Add 1/4 cup batter to each greased paper lined cupcake well. Follow the directions on the box for baking. It usually says something like 13-15 minutes in a 400 degree oven!

I can say this is a quick breakfast alternative. It is surprisingly good. You can just take the batter and cook it like you would pancakes. They are great with maple syrup! Remember, you can ROCK THAT PLATE!
