One Pot Meal!

 Steamy pot filled with great tasting/ good for you dinner!
 Start with your kale, then cabbage, & then onion. Add your broth, beer, and spices!
 On top add carrots and potatoes. Cook on a simmer for 30 minutes. Then add Polish or smoked sausage.
Get your fork and spoon out for this one! Here we go:

1 bunch of fresh kale -Wash and pull leaves from stems.
1 small cabbage head -Remove core and chop into 2 inch squares.
1 Spanish onion-  dice
6 carrots- Peel and cut on the bias (2 inch pieces).
6 Idaho potatoes-peel and cut in half.
2 packs of Polish Sausage or smoked sausage- cut in 2 or 3 inch pieces.
1 garlic clove- smash it & throw it in the pot.
1 teaspoon red pepper flakes
Kosher salt and fresh cracked black pepper- to taste
6 cups of chicken stock
1 beer- We used Smithwick's Ale this time. Change it up!
Water- to bring the liquid level up to over the cabbage & kale. Do not cover the potatoes. They will steam.

In a large stock pot place your cabbage, kale, & onion. Add you liquid ingredients. Bring the liquid level over these ingredients. Place your carrots and potatoes on top of this. Add all of your spices and garlic clove. Cover and bring to a boil. Lower the heat to medium ans simmer with the cover for around 30 minutes. Add in your sausage of choice. Simmer for an additional 10 minutes!

Wow! This is healthy and hearty. Turkey sausage is great for this. It will warm your soul and hands. If you serve it in a bowl! You will not be disappointed! Up next, the homemade Irish Soda Bread, I made to eat with this dinner. Get in there! You know....your kitchen. This could not be easier or more rewarding! Remember, you can ROCK THAT PLATE!
