Grilled chicken salad!


I made a traditional salad with a twist! Grilled chicken, fresh baked croûtons and a lemon vinaigrette make this a full meal.
Chicken-
2 chicken breast
1 tablespoon garlic powder
1 tablespoon onion powder
a generous amount of salt and pepper
Rub spices on chicken and grill.
Croûtons-
1 loaf of bread
olive oil
salt and pepper
I buy the day old loaf at the store. Cut into cubes. Toss with olive oil and spices. Bake at 350 degrees until golden brown. The croûtons store well in a brown paper bag.
Dressing-
1/2 garlic clove- grated on a micro plane
2 tablespoons of Dijon mustard
2 lemons- juiced
1/4 cup olive oil
salt and pepper
Add Dijon, garlic,salt, pepper and lemon juice in a bowl and whisk. Stream olive oil in slowly while whisking. You may very the garlic to your taste. We have been together for almost eight years so we now both love garlic. Remember, you can ROCK THAT PLATE!
