Potatoes my way!



We all know Au Gratin potatoes can be bland! I always try to put vegetables in everything. Sometimes I use mushrooms, red peppers or zucchini.
2 boxes Au Gratin potatoes- cheap brand is fine!
3 cloves of garlic
1 large zucchini- grated
1 small white onion- sliced paper thin
5 cups of water- hot
1 cup milk
2 tablespoons of margarine
pepper to taste
1/2 teaspoon of cayenne pepper
Heat water to a boil ad add powdered cheese mix, pepper and cayenne. Spray casserole dish with Pam. Add potatoes , onion, garlic and zucchini. Pour over the water mix. Add milk and margarine and stir. Place casserole dish with a sheet pan lined with aluminum foil in oven at 400 degrees. Bake for 1 hour. Make sure the potatoes are tender. Let stand on counter for 20 minutes this will let them thicken up. We make a great big salad and eat. Jason also loves chicken tenders with this. Enjoy!
