Chicken Pita Pockets!!




We eat grilled or baked chicken in any form several times a week! I save the left over chicken and turn it into lunch. Easy, quick and delicious!

whole wheat pita pockets- the pockets fit nicely into your toaster, so you don't have to fire up the oven!
lettuce
various vegetables- I use cucumbers, sliced red peppers,etc.
The sauce!
1/4 cup olive oil mayonnaise
2 teaspoons of Sambal- this is a hot garlic chili paste found in the international Ilse. It has a green lid, jar size with gold label with a rooster on it.
1/2 juice of fresh lemon or lime
salt and pepper to taste
Toast your pita. Add as much chicken, sauce and veggies as you want! Remember, you can ROCK THAT PLATE!
