Stuffed zuccchini boats!








I have to be honest I have had to try this again. Jason was not at fan of this dish! I think I have succeeded in making this work!

4 large zucchini- scoop them out with a melon ball scoop! save flesh to mince and add into stuffing
1 pound ground turkey sausage
1 pack of sliced fresh mushrooms- minced
1 small bunch of scallions- minced
1 table spoon of red pepper flakes- we like it hot, adjust to lower amount if you don't!
1/4 cup of Parmesan cheese
1 table spoon of dried basil
1 teaspoon garlic powder
5 ounces of  Nuefchatel cream cheese- It just lower in fa than regular!
1 1/2 cups of Panko bread crumbs- Japanese bread crumbs found by the soy sauce
2 table spoons fresh parsley- minced
1 cup of your own marinara sauce
Hull out some of the zucchinis flesh with a melon ball scoop. See picture above. Brown sausage with scallions and mushrooms. Drain well. Add all remaining ingredients EXCEPT the marinara sauce and mix well! Pack the hulled out boats with stuffing! See picture above. Bake in a 400 degree oven covered with foil for 20 minutes. Uncover and bake until golden brown and the flesh of the zucchini yields to a fork. Warm marinara in a sauce pan. Spoon a reasonable amount of sauce onto plate and rest the zucchini boats on top. You could stuff anything with this mixture. Remember, you can ROCK THAT PLATE!
