Chicken stew over brown rice!




When I used t cook in restaurants we would refer to this as "cream of walk in soup". This means that clean your frig out and throw it into a pot. Any variation on this recipe works because it is flexible! What ever you have or like will work! I use a pressure cooker to make this quick and tender!
3 boneless chicken breast- cut into 2 or 3 inch cubes
salt and pepper
1 bay leaf
2 cloves of garlic- sliced
carrots
celery
1 onion- dice
Yukon gold potatoes
2 fresh jalapeƱos
2 cans of chicken stock or broth
1 cup of frozen peas
1 bag of frozen asparagus
Throw everything but the peas and asparagus into the pressure cooker and let it rip for about 15 minutes of continuous steam and pressure! Uncover and add peas and asparagus. We like this over brown rice! Remember, you can ROCK THAT PLATE!
