Asian chicken salad!


Dressing:
1 inch fresh ginger grated on a micro plane
1 carrot grated on a micro plane
2 tablespoon peanut butter
1 tablespoon soy sauce
1 tablespoon Sambal- Hot sauce found in Asian are in grocery store. It has a green cap with gold foil labeling with a rooster on it. This is a garlic filled chili paste that is great on anything!
2 limes- juiced
1/2 cup hot water

Add hot water to the peanut butter and whisk to thin. Add lime juice and whisk then add all other ingredients. Taste to adjust for salt and spice.

Chicken rub:
1 tablespoon pink pepper corns ground
2 teaspoons garlic powder
2 teaspoons onion powder
salt and pepper- be generous!
1 tablespoon olive oil
Coat chicken with olive oil ad rub with spice mixture and grill.


I make a traditional salad with carrots, cucumbers, radish, scallions and red peppers. I also throw in 2 tablespoons of minced cilantro and flat leaf parsley. You can top with toasted peanuts. We used a leftover loaf of garlic bread and made croutons. That why I did not put garlic in the dressing! We would be sweating that out for days! I hope you enjoy. Remember you can ROCK THAT PLATE!
