Asian grilled chicken salad part two!


Chicken:
2 to 4 chicken breast
1 cup of  any Asian sesame marinade plus 1/4 cup to brush on while grilling.
1 zip top bag

Add chicken and Asian sesame marinade to bag. Let marinate for 2 hours or even overnight. I chose to grill my chicken. Grill as you would any chicken breast while brushing with 1/4 cup of marinade. When chicken breast are done wrap in aluminum foil to rest for 10 or more minutes.

Salad:
1 bag of your favorite greens
1 small package of blanched slivered almonds- toasted
1/4 cup of chow mein noodles
1 carrot- grated
1 English cucumber- cut into rounds

Assemble salad as you wish. Place grilled chicken cut on the bias on top.



Dressing:
3 tablespoons of peanut butter
1/4 cup of HOT water
2 limes- juiced
1 tablespoon of Sambal -see picture below
2 teaspoons honey
1 tablespoon of soy sauce or Tamari
1/4 teaspoon of ginger
1/4 teaspoon of garlic powder
1 tablespoon mayonnaise
kosher salt and fresh ground pepper to taste

Put peanut butter and hot water in a bowl and whisk until smooth. Add all other ingredients and whisk. Pour over salad and enjoy.

This is super yummy! It is a great dinner in the middle of winter because,  it makes you think of summer! I hope everyone will try this recipe. Remember, you can Rock That Plate!
