Salsa:
4 cans diced tomatoes
2 limes- juice and zest
4 scallions aka- green onions- small dice
1/2 bunch cilantro
2 green Chiles or fresh jalapeƱos
3 cloves garlic
salt to taste
1 teaspoon cumin
In a food processor pulverize the cilantro, garlic and Chiles. Add tomatoes and pulse until you achieve the texture you want. Combine all ingredients in a large bowl. Taste and add more salt , cumin, or lime juice to taste. Chill in the refrigerator until you need it.
Meat:
2 or 3 pounds ground beef

1/2 cup water
1/2 cup of salsa

Brown meat with 1/4 of spice blend. After browned, drain the grease off in a colander. Return to pan and add 1/4 cup chili spice blend, water, and salsa. Let simmer for 10 to 15 minutes.

- cheese- we love extra sharp cheddar
- lettuce
- avocado
- your homemade salsa
- sour cream
