Greek Salad!

Greek Salad:
1 bag mixed spring salad greens
1/2 each- red, green, yellow peppers- julienned
1/2 English cucumber- 2 inch dice
3 scallions/green/spring onions- small dice
1/2 cup of feta cheese- I used sun dried tomato feta cheese.
10 calamata olives- pitted and diced

Dressing:
1 lemon- juiced
1 tablespoon Dijon mustard
1/4 cup olive oil
1 teaspoon oregano
salt and pepper - to taste

Place all veggies and salad mix in big bowl. Add feta and olives. In a separate bowl, whisk Dijon and lemon juice. Slowly whisk in olive oil. Add oregano, salt and pepper. Taste for salt level. Pour over salad and toss.

I cheated and bought a rotisserie chicken at Kroger's. I also bought a great loaf of rosemary potato bread. I think this was a quick and great tasting dinner. Food can be fast. Just try to make sure your eating real food. You know stay away from the ingredients hat sound like chemicals. Remember, you can Rock That Plate!
