Roasted chicken!

Chicken:
1 whole chicken- rinsed with water and patted dry
1 tablespoon garlic powder
1 tablespoon black pepper
2 teaspoons kosher salt
1 cup white wine

Sprinkle chicken inside and outside with spice mixture. Use a soup can fill with wine. Place chicken like it is sitting in the can. Put chicken with the can in a baking bowl. This is to catch the juices. Bake at 350 degrees for 45 minutes. Turn the heat up to 400 degrees until juices run clear. I take the baking juices and transfer them into a sauce pot. I skim out most of the fat and add 1/2 cup of wine and bring to a rolling boil for 3 to 5 minutes, until it reduces. This will become a nice pan sauce to pour over the meat.
This food is comforting during the blizzard! Stay safe and warm. Remember, you can Rock That Plate!
