Grilled Chicken Greek Pitas!

Salad mix:
I bag of spring salad mix
1/2 red onion- sliced paper thin and soaked in ice water.
1/2 English cucumber- 1 inch dice.
6 ounces feta cheese crumbles
1/2 cup Kalamata olives- diced
1/2 red pepper- sliced

Toss this all in a big bowl!

Dressing:
1/2 cup olive oil- good quality
2 lemons- juice
1/4 cup red wine vinegar
2 tablespoons Dijon mustard
1/2 tablespoon dried oregano
kosher salt and pepper
Whisk lemon juice, red wine vinegar and Dijon mustard. SLOWLY add olive oil while whisking. This allows an emulsion to form. Add all other ingredients and whisk. Pour over salad!

Chicken:
3 boneless, skinless chicken breast
coat liberally with:
olive oil
garlic power
oregano
kosher salt and pepper
Grill or bake in oven (400 degrees) until golden brown. Let meat rest for 10 minutes in aluminum foil and slice. Place pita, top with salad, and then fan out the chicken breast. EAT and ENJOY!

Pita:
Heat in oven or on the grill
** Our Wal-Mart Market grocery store started carrying Naan bread. This makes for an excellent pita! $2.50 for 2 huge Naan breads. They taste great and it is a good value. That is what is pictured above.**


This is a nutritious, zesty, and filling dinner. Great with a glass of wine. I hope everyone tries this. Our friend Aaron said " That's much better than any pita at the State Fair!" That is a big compliment, as far as guys go! Remember, you can ROCK THAT PLATE!
