Veggie mac n' cheese!

1 box 2% Velveeta mac n' shells
1 tablespoon olive oil
1/4 diced onion
1 zucchini -diced
1/2 red pepper- diced
1 juice of lemon
1 teaspoon garlic powder and red pepper flakes
salt and pepper to taste

Follow the box directions. In a sauté pan add oil and all vegetables. Sauté until tender crisp on medium heat. Stir in seasonings and lemon juice to the mac n' cheese. Add all of this together. I know lemon juice sounds strange but it is really good. I have made this with what ever I have on hand. I have used asparagus and spinach. Be creative. This is a quick lunch. It is filling and yummy! Remember you can ROCK THAT PLATE!
