Irish Soda Bread!

Yummy!
                                                                                                                 
Mix all dry ingredients together! Add butter until it becomes sandy!
                              
Add the wet to the dry ingredients!
                                                     
Give it a whirl until the dough removes itself from the sides of the bowl!
                                         

It is a beauty that tastes great! Here we go:

2 cups of all purpose flour + 1 cup of whole wheat flour
1 tablespoon of baking POWDER
1 teaspoon of baking SODA
1/2 teaspoon of Kosher salt
1/4 cup of unsalted butter- in between room temp and frig cold!
1 cup of buttermilk
1 egg


***You can add 1 cup of currants, golden Sultana raisins, or Caraway seeds on the top with a bit of sea salt mixed in!***

Mix your dry ingredients for 30 seconds in your mixer or with a whisk. Add your butter and whirl on speed #2. You  are trying to achieve a pea sizes chuck sand texture. This is like making a huge biscuit. No mixer, use two butter knives and cut it in. Make a well in this mixture and add the egg and buttermilk. Let whirl on #4 speed until the dough forms a ball. No mixer, use your hands! Pull the dough out and place it on your baking sheet that is lined with parchment paper. Form into a round plump shape. Use a knife to cut an cross or x shape in the top of the dough. This will allow the loaf to expand during the baking process. You should not cut deeper than 1/2 to 1 inch! Bake in a preheated 400 degree oven for 15 minutes. Lower oven temperature. Bake until a knife that has been inserted comes out clean. This may take 20 to 40 minutes linger depending on your ovens true temp.

I can't explain how great this bread is! I can tell you a story about a CRIME . We ate 1/2 the loaf between my husband and myself last night! Around 3 o'clock this morning... I hear someone in my kitchen. Someone had managed to get  the rest of the bread from a top my full sized deep freeze. It was our dog, the Governor, who in seconds ate the remaining amount of the loaf. I think he paid the cats to help him get it down! We were out smarted once again! That is not a new feeling for us. We are out numbered! 3 against 2 HUMANS..We don't stand a chance! They only keep us around to scratch their bellies. He did NOT even look ashamed! Yep! It is really that good! It has Governor's paws of approval! Please do not think I feed my dog (at least on purpose) people food. We do not because he has food allergies. Anywhooo.... Try this! You will not regret it! Remember, you can ROCK THAT PLATE!
