Salsa!

Fresh and healthy great on most anything!

Here we go:
3 cans of diced tomatoes
1 to 2 fresh jalapeños
1/2 bunch of cilantro
1 clove of garlic
4 scallions (green/spring onions)
3 limes- juiced and zest
1 tablespoon of olive oil
kosher salt to taste

Place your onions, garlic, cilantro and jalapeños in a food processor and give them a whirl. Process until you achieve a small grind. Add in the tomatoes and pulse about 10 times. You still want great texture. Stir in the olive oil, lime juice and zest. Salt until you achieve your preference.

We adore this salsa. It is great on traditional things as well as eggs or stirred into soups. It is a quick way to get that summer feeling in the cold dark winter. We celebrate surviving the cold with a nacho and margarita night. Every couple of weeks, in the winter, this will revive you soul. If I take this to a party. I often de-seed and fine dice English cucumbers to mix in. Enjoy! Remember, you can ROCK THAT PLATE!
