Pasta Gremolata!











This is generally referred to as a Gremolata! All that means is a compound made of herbs, lemon and garlic. This is SUPER quick and tasty! I make this for quick lunches, but you could add caramelized onions and toasted pine nuts and serve this for dinner.
1 or 2 cups cooked whole wheat spaghetti or angel hair pasta
1/2 cup parsley minced fine- I use scissors and cut very fine-it is faster!
1 lemon zested and juiced
1 garlic clove grated on a micro plane or garlic press
2 tablespoons of olive oil or more if you wish
1/4 cup of Parmesan cheese
1/4 to 1/2 cup of the water you cooked the pasta in
Cook pasta. Save some of the water. While the pasta is hot add all remaining ingredients! Stir and eat! Remember, you can ROCK THAT PLATE!
