Asparagus!














1 to 2 pounds fresh or frozen Asparagus
2 tablespoons good quality olive oil
kosher salt and fresh cracked pepper to taste
1 lemon zest, juice with 1/4 the lemon sliced wafer thin to make it ow so pretty place on top after cooking.

Place Asparagus in foil. Sprinkle with oil, salt, pepper and lemon zest. Cook alongside your main dish in the oven. Wrap it tightly in the foil. Put in oven or on the grill. Temp can start at 350 and be as high as 400 degrees. You may just throw it on the grill. If you put it on the grill, indirect heat side, please. Depends on what you are already cooking. Time will vary , a good check point is 30 mins..

I have professed my love for Asparagus several times in my site. I just wanted to give a quick and easy recipe for a side dish. I use frozen when I can not get fresh. I think this is fine. I love to throw this foil pack on the grill in the summer. Please hold off on the fresh lemon juice, and wafer thin slices of lemon, until after you take it out of the foil. Aluminum foil can react to the acidity in the lemon. A yucky taste will ensue! Be aware sometimes Asparagus overload can make your pee stink...hehe! Remember, you can Rock That Plate!
