1 box devil's food cake mix
1 1/2 cups of milk
3 tablespoons dutch coco powder- save 1 tablespoon for dusting the tops of the cupcakes.
1/2 cup vegetable oil
3 eggs
Place all ingredients in a large mixing bowl. With an electric beater mix for 2 minutes. I bake at 300 degrees. This yields a softer and moister cake. Follow box directions. Remove after a toothpick comes out of the center of the cakes clean.
Frosting:
1 orange- small to medium juice and zest
1 box chocolate jello instant pudding mix
1/4 cup of milk
1 tub of cool whip type product
Put everything into a bowl and mix. After frosting dust tops of cakes with remaining coco powder.

Thanks for the comments on my blog, Andrea. I don't cook many desserts, but do love chocolate and fruit combinations. After reading this, I may try a orange and chocolate souffle. We get a dozen free-range, organic eggs every week - including some this morning! Thanks for the inspiration.
