Homemade Mayonnaise!

Mayo:
1 egg yolk
1 tablespoon Coleman's mustard powder
2 tablespoons red wine vinegar
1/2 cup to 1 cup olive oil- good quality
1 teaspoon tarragon
salt- to taste

Get out your old school electric beater and only put in one beater. In a bowl beat egg yolk, mustard powder, and red wine vinegar. SLOWLY! I mean almost one drop at a time add in the olive oil while beating. This will take 4 to 5 minutes. When mixture is fluffy add in seasonings.
Mayo can have many incarnations. You can use lemon juice, garlic white wine vinegar. The list is endless. I made this to serve with roasted chicken! I hope you will try this easy recipe. Homemade is fantastic. Please make sure your egg is fresh. Remember, you can Rock That Plate!

Homemade mayonnaise tops my list of indulgences! Nothing gets me ordering an extra side of fries but 'accompanied with homemade mayonnaise'.
